Asparagus, Cabbage and Chicken or Chicken Stir-Fry

- 1 lb seitan chicken strips or 1 lb chicken breast, strips
- 1⁄2 cabbage, sliced in 1/2 inch pieces
- 1 lb thin asparagus, washed and bottom 2 inches (or more)
- 1 red bell pepper, diced
- 2 tablespoons vegetable oil
- 2 tablespoons finely chopped ginger
- 1⁄2 cup soy sauce
- 1 1⁄2 tablespoons red pepper flakes
- 1 tablespoon black cherry jam or 1 tablespoon other jam
directions
- Heat the oil and add add the cabbage, soy sauce, jam and red pepper flake.
- Cook on high 3-5 minutes until cabbage has started to wilt.
- Add the chicken, ginger, asparagus and bell pepper.
- Cook on high heat the entire time and stop once the asparagus is slightly tender, about 10 minutes.
- Serve with white or brown rice.

This was excellent. I cooked the chicken first in a little olive oil, garlic powder, paprika and salt and pepper. Set the chicken aside. Followed the rest of the recipe as written except for adding the crushed red pepper (only a 1/2 tsp) at the end so I could cook some for the kids, first. I used huckleberry jam and served it with brown rice. My four year old son loved it (even with cabbage in it)! Thanks! The addition of the jam really makes this recipe delicious.

I altered the recipe a little. I used sesame oil instead of vegetable oil. And added sweet chili sauce with the soy sauce. I also added shaved carrots with the cabbage. I cut the asparagus into two inch segments, so it was easier to stir in my pan. I wish I had a wok!! Made homemade fried rice to go with it and the family loves it!!!!! Thanks for the recipe!!
