Asparagus, Cabbage and Chicken or Chicken Stir-Fry

"Whipped this one up randomly one night and it turned out great. Over did the heat a bit with the pepper flake, but even so it was quite good. I left the extra heat in the recipe, but feel free to halve or more if you don't like too much heat."

  • Heat the oil and add add the cabbage, soy sauce, jam and red pepper flake.
  • Cook on high 3-5 minutes until cabbage has started to wilt.
  • Add the chicken, ginger, asparagus and bell pepper.
  • Cook on high heat the entire time and stop once the asparagus is slightly tender, about 10 minutes.
  • Serve with white or brown rice.

  1. Great recipe! What a keeper! I didn't have red bell peppers or asparagus, but it was great without them. Reduced crushed red pepper to 1/4 tsp for toddler and used 1/2 TBs of jarred minced ginger. Super great and easy thanks!
     
  2. This was excellent. I cooked the chicken first in a little olive oil, garlic powder, paprika and salt and pepper. Set the chicken aside. Followed the rest of the recipe as written except for adding the crushed red pepper (only a 1/2 tsp) at the end so I could cook some for the kids, first. I used huckleberry jam and served it with brown rice. My four year old son loved it (even with cabbage in it)! Thanks! The addition of the jam really makes this recipe delicious.
     
  3. Very good! Fixed this last night because I had all the ingredients. Added a few onions and cayenne powder instead of crushed red pepper. This is a keeper. Will fix this again.
     
  4. I altered the recipe a little. I used sesame oil instead of vegetable oil. And added sweet chili sauce with the soy sauce. I also added shaved carrots with the cabbage. I cut the asparagus into two inch segments, so it was easier to stir in my pan. I wish I had a wok!! Made homemade fried rice to go with it and the family loves it!!!!! Thanks for the recipe!!
