  • Heat oil in cast iron skillet.
  • Sauté the onion until soft.
  • Salt and pepper the flour and then dredge the chicken to coat.
  • Add chicken to skillet and brown on both sides.
  • Slice half the lemon in thin rounds and add to the skillet.
  • Squeeze the juice of the remaining lemon over the chicken.
  • Add the quartered artichokes and their juice to the pan.
  • Cover and simmer for about 20 minutes.
  • Serve with brown rice.
  • Fast and tasty!
