These rich little apricots balls are more-ish. I challenge you to eat just one. They're very nice in summer when frozen as well. (The serving size is a guess as I haven't made this in several years and it also depends on how big you make the balls. I'll ammend this next time I make them)

Ingredients Nutrition


  1. Mince apricots in blender.
  2. Combine with 1 1/2 cups of coconut and all other ingredients (reserving 1/2 cup coconut for rolling) and blend well.
  3. Take a teaspoonful of mixture and roll into balls.
  4. Toss in extra coconut.
  5. Store in fridge.

great easy recipe! easy to roll with wet hands, and they taste better 24 hours later. I popped mine in the freezer, but they havent actually "frozen" they are still soft (?) I will make these again for xmas hampers, but I might add a little white chocolate, just so they harden a bit more. Taste wise, brilliant! Nov swap

Very nice indeed busyozmum. I halved the amounts given and still made plenty. got about 20-25, not sure because as I mad them the kids were tasting them !! A very tangy flavour from the apricots and yet sweet, and you are right they are very more-ish. They vanished before my eyes, even by those who dont like apricots!!!!Actually I wished I had made the whole amount !! Will be making agin....Thanks busyozmum.
