These rich little apricots balls are more-ish. I challenge you to eat just one. They're very nice in summer when frozen as well. (The serving size is a guess as I haven't made this in several years and it also depends on how big you make the balls. I'll ammend this next time I make them)
- 750 g dried apricots
- 473.18 ml desiccated coconut
- 354.88 ml brown sugar
- 590 g sweetened condensed milk (or 1 1/2 tins)
- 14.78 ml lemon juice
- Mince apricots in blender.
- Combine with 1 1/2 cups of coconut and all other ingredients (reserving 1/2 cup coconut for rolling) and blend well.
- Take a teaspoonful of mixture and roll into balls.
- Toss in extra coconut.
- Store in fridge.
OUTSTANDING TASTE TREATS! I took the tip from mummamills & added just a small amount of white chocolate, but otherwise followed the recipe right on down! great easy recipe! easy to roll with wet hands, and they taste better 24 hours later. I popped mine in the freezer, but they havent actually "frozen" they are still soft (?) I will make these again for xmas hampers, but I might add a little white chocolate, just so they harden a bit more. Taste wise, brilliant! Nov swap
Very nice indeed busyozmum. I halved the amounts given and still made plenty. got about 20-25, not sure because as I mad them the kids were tasting them !! A very tangy flavour from the apricots and yet sweet, and you are right they are very more-ish. They vanished before my eyes, even by those who dont like apricots!!!!Actually I wished I had made the whole amount !! Will be making agin....Thanks busyozmum.
