    Directions:

      Soak the oats in milk for about one hour.

      Preheat oven to 400 degrees.
    3. 3
      Spray muffin pan with cooking spray.
    4. 4
      Combine the oat mixture with the applesauce and egg white, mix until combined.
    5. 5
      In a separate bowl measure and whisk the dry ingredients.

      Add wet ingredients to dry and mix until just combined. Add nuts or raisins if desired.

      Do not over mix the batter or the muffins will be tough.
    8. 8
      Spoon muffin mixture into muffin pan.
    9. 9
      Combine the cinnamon and sugar.

      Top each muffin with some of the mixture.

      Bake 20-25 minutes or until done.

      Remove from pan, cool and enjoy.

      These are delicious!! I did make a few changes: I just added the cinnamon into the muffins instead of putting it on top (and I think I will experiment with more spices next time!), I added small chunks of Granny Smith apples instead of nuts or raisins, and I only had to cook them for about 15 minutes in my oven. I will absolutely be making these again and again! Delish!

      These are DELICIOUS! They're moist and the perfect amount of sweetness: I also really liked the cinnamon and sugar mixture- it provides a nice "finish". I halved the recipe and used one whole egg instead of two egg whites. It was quick and painless to complete. I will definitely be making these again- thanks so much!!

      I halved the recipe to make 6 yummy muffins! I followed the recipe exactly and added in 1/4 c. of raisins. Next time I'd like to put nuts in it too. The cinnamon & sugar topping adds a nice touch of sweetness for me and we ate them warm. Great recipe!
