  • Preheat oven to 375 degrees.
  • In a large bowl combine flour, oats, baking powder, baking soda, salt and cinnamon.
  • In a medium bowl combine applesauce, buttermilk, sugar, oil and egg. Make a well in dry ingredients and add applesauce mixture and dried cranberries.
  • Stir until just moist.
  • Fill muffin cups 2/3 full, adding a tsp of cranberry sauce in the middle of each cup.
  • Bake for 16-18 minutes.

  1. Loved this recipe. We used 1 cup of frozen whole cranberries since we didn't have cranberry sauce and multi grain flour since we didn't have whole wheat flour. They turned out great.
     
  2. Thumbs up from every member of my family for this one! I omitted the cranberry sauce because I didn't have any and the muffins still had a good cranberry taste to them. The extras (I made a double batch) froze beautifully too and warmed nicely in the microwave for our weekday breakfasts on the go.

  1. substituted multi grain for whole wheat flour and whole frozen cranberries for cranberry sauce as that it what we had in the house.
