Apple 'n' Spice Muffins

ingredients
- 473.18 ml flour
- 78.78 ml brown sugar
- 6.16 ml baking powder
- 7.39 ml baking soda
- 4.92 ml cinnamon
- 2.46 ml salt
- 1.23 ml nutmeg
- 236.59 ml chopped peeled apple (I used the granny smiths, or golden delicious and I think any kind will work, just go with your own)
- 1 egg
- 236.59 ml skim milk
- 44.37 ml melted butter
directions
- Preheat oven to 400 degrees F.
- In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, salt and nutmeg. In a separate bowl, mix together apple, egg, milk and butter. Add to dry ingredients and mix until just combined, but not overmixed.
- Spoon into lightly greased or cupcake lined muffin tray until about 2/3 full.
- Bake for 15-18 minutes or until golden and tops are firm to the touch.

These were really good! I made a few changes, using whole wheat pastry flour and buttermilk, and increasing the brown sugar. I cut the recipe in half and it made 7 muffins. I would definitely suggest adding more cinnamon and doubling the apples. Overall though, these are great muffins and I will be making them again for sure.

These muffins were very good. They are not very sweet, so if a sweeter muffin is desired, increase the sugar. My family prefers a sweeter muffin, so I will be increasing the sugar next time. Also, I added 1/4 tsp of PaulaG's Baking Spice Blend Mix <a href="/145505">Baking Spice Blend Mix</a> to give it a little extra spice. I think these would be good with a little cinnamon/sugar sprinkled on the tops of the muffins before baking. I baked these in a cast iron "mini" muffin pan at 375ºF for 12 min. (cast iron cooks a little hotter). This recipe made 18 "mini" muffins. My family enjoyed these muffins and I will be making them again. Thank you for sharing.

I'm a mom and I love to cook. Started cooking when I was 20, and found I love to do it! I love to experiment with new stuff all the time, and I hate prepackaged foods and recipes that use them, so I always try to figure out the ingredients on my own to copy a recipe. I just don't think that opening a can of baked beans and adding something to it makes for homemade beans!!)
My husband had a heart attack last year at the age of 39! So now, we try to eat a lot healthier. I am always looking for ways to get more veggies into him. In my recipes, I never add salt, but I post it here cuz I know most people still like the taste. It takes a while, but you get over it when you cut it out of your cooking. We don't even have a salt shaker anymore. Poor guests!
