- 1⁄2 cup butter or 1/2 cup margarine
- 3⁄4 cup sugar
- 1 teaspoon vanilla extract
- 3 eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup evaporated milk
- 1 teaspoon lemon juice
- 2 -3 diced apples

STREUSEL TOPPING
- 1 cup chopped pecans
- 1 cup packed brown sugar
- 1⁄2 teaspoon ground cinnamon
- 6 tablespoons butter or 6 tablespoons margarine, softened

ICING
- sifted confectioners' sugar
- 1 tablespoon butter or 1 tablespoon margarine, softened
- 1⁄2 teaspoon vanilla extract
- 3 tablespoons milk

- DIRECTIONS.
- 1. In a mixing bowl, cream butter for 30 seconds. Add sugar and vanilla; beat until well combined. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder and soda; add to creamed mixture alternately with sour cream. Spoon half of batter into a greased 10-in. tube pan. Combine topping ingredients; sprinkle half over batter and spread half the apples topping mix. Add remaining batter, stick apples into the batter and cover with remaining topping.
- 2. Bake at 350 degrees F for 45 minutes or until done. Cool in pan on wire rack for 10 minutes before removing from pan to cool completely.
- 3. For icing, combine all ingredients; drizzle over cake.
