  • Preheat oven to 350f degrees.
  • Mix the flour, salt, nutmeg, baking soda and cinnamon together in a medium bowl and stir thoroughly.
  • Cream the sugar and butter together in a large bowl.
  • Beat in the eggs and whisk until smooth.
  • Stir in the shredded apples and dates until they are completely distributed throughout.
  • Slowly stir in the dry ingredients and mix thoroughly into the batter.
  • Spray the bottom and sides of a 9 inch square baking pan with nonstick cooking spray or grease it with butter and pour in the batter.
  • Bake in the preheated oven for about 45 minutes.
  • Put the confectioners' sugar in a sifter and dust it over the cake a few times until all the sugar is gone.

  2. These were only ok for me. I found them easy enough to make but they were missing something vital. More fruit flavour,all I could taste were the spices.

  4. I've made this a few times now. I double the recipe to make a 9x13, and it never lasts more than 24 hours. It's delicious & looks wonderful! It's so good I've even shared it with friends & house guests, and they all think it's great! My 2 & 6 year old boys love this as well! It cuts nicely into squares. It tastes like a snack cake rather than a dessert cake, but it does NOT taste "healthy" or low-fat! I leave out the dates & confectioner's sugar topping. Instead I top it with a streusal topping (the topping listed in recipe 15937 but I replace half the margarine with apple sauce) before putting it in the oven. I also replace 1 Tbsp. of the whole wheat flour with 1 1/2 tsp. ground flax seeds & 1 1/2 tsp. wheat germ to make it healthier.
     
  5. This is a truly delicious cake! I used fuji apples, and a 1/2 teaspoon of nutmeg. I also baked it in an 8 inch pan. Next time I think I'll reduce the sugar a bit. This is a definite keeper!
