  • Combine butter, sugar and dates in a large saucepan. Cook, stirring constantly, until the butter is melted, the sugar is no longer white and the dates are mostly melted, 8 to 15 minutes. The mixture should be a shiny, brown sticky mass. Remove from the heat.
  • Add salt, vanilla, cereal and coconut; stir well to combine.
  • When cool enough to handle, squeeze and roll the mixture into 1-inch balls. Place on a wax paper-lined baking sheet. Refrigerate until chilled.

  1. Love dates, love coconut, what's not to love these no bake cookie balls! I had some choco krispies, used them and they are a great new treat.

I'm sorry but these just weren't a hit - I babysat my friend's daughter and her buddies and they didn't like them very much... said they were "weird" so I ended up making them some rice krispie squares instead... Thanks for the recipe though! It was totally worth trying to try to get the girls to eat something more nutritious than a marshmallow!
