From Quick-Fix Veg
- 1 tablespoon extra virgin olive oil
- 1 garlic clove, chopped
- 3 scallions, chopped
- 4 cups vegetable broth
- 1 (16 ounce) package frozen mixed vegetables
- 1 (16 ounce) can chickpeas, drained and rinsed
- 1 (15 ounce) canpetite diced tomatoes, drained
- 1⁄3 cup alphabet shaped pasta
- salt & pepper
- Cook garlic and onion in EVOO over medium heat.
- Add broth and bring to a boil.
- Add mixed vegetables, chickpeas, and tomatoes. Season to taste with salt & pepper. Cook 5 minutes.
- Add pasta, simmer 10 minutes.
