The "unofficial" start to summer is Memorial Day! This recipe is a unique, gourmet twist on a classic potato salad. It's perfect for a picnic or a great lunch!

Ingredients Nutrition

  • 4 -5 medium red potatoes (cooked and cooled)
  • 1 tablespoon chives, chopped
  • 3 tablespoons red peppers, chopped
  • 2 tablespoons black olives, chopped
  • 1 alouette aioli
  • 1 (12 ounce) bag mixed salad greens


  1. Cut potatoes in half.
  2. Place potatoes, scallions, chives, red peppers, and black olives in bowl.
  3. Toss with Alouette Aioli Sauce.
  4. Serve on a bed of salad greens.
  5. Aioli Sauce.
  6. 1 pkg.(6.5 oz.) Alouette Garlic & Herbs Spreadable Cheese
  7. 6 tablespoons Olive oil.
  8. 2 tablespoons Vinegar (recommend balsamic).
  9. 1 teaspoons Shallots, minced.
  10. Aioli Directions:.
  11. Place Alouette Garlic & Herbs Spreadable Cheese in medium sized bowl.
  12. In another bowl, whisk together olive oil, vinegar and shallots until well blended.
  13. Gradually add the vinaigrette mixture to the cheese creating a delicious sauce.
