  1. fry onion in oil until golden brown.
  2. add ginger paste , sliced potatoes , cauliflower florets .
  3. simmer for 2 minutes .add tomatoes , cumin seeds , salt , tumeric powder , chilli powder .and all spice.
  4. cover it with lid and cook for 7 minutes.

Sounds pretty delish, I've enjoyed it in North Indian restaurants, but how do you simmer it at the beginning when it's just a bit of oil?
