A light fresh tasting pilaf Not sure where I first found this recipe
- 1 tablespoon butter
- 1 1⁄2 cups white rice
- 3 cups chicken broth
- 1⁄4 cup toasted almond (slivers)
- 3 tablespoons chopped fresh parsley
- 2 teaspoons lemon zest
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon ground pepper
- Saute uncooked rice with butter until golden.
- Add broth and bring to a boil, cover and simmer until liquid is absorbed. Add other ingredients.
