- 2 medium ripe bananas, mashed (I puree)
- 2 eggs
- 1 3⁄4 cups unsifted all-purpose flour
- 1 cup granulated sugar
- 1 cup chopped walnuts
- 1⁄2 cup vegetable oil
- 1⁄4 cup buttermilk, plus
- 1 tablespoon buttermilk (I use fresh or powdered)
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1⁄2 teaspoon banana extract (optional)
- 1⁄2 teaspoon salt
directions
- Preheat oven to 325 degrees.
- Grease and flour a 9x5-inch loaf pan.
- Combine all ingredients in a large bowl and mix well.
- Transfer to prepared pan.
- Bake until top is golden brown and splits slightly, about 1 hour and 20 minutes.
- Slices well.
- Do not double recipe.

Directions said not to dble recipe so I made it twice. While I made it twice the first loaf sat for about 20 minutes on the counter. After baking both together the loaf that sat for 20 minutes was higher then the 2nd loaf. Must have allowed the soda to do it's thing. Used the banana extract; good trick, very chewy moist crumb and spongy; rose high in the pan. It did take an hour & 20 minutes.

I’ve been using “Zaar” website for the last year but ready to commit myself to adding my two cents worth (including some photos). I live with my DH and two great kids and one crazy dog in the foothills of Colorado. We have a great view with lots deer and red rocks. I have a lot of cookbooks, but now use mostly “Zaar” recipes and from “Cooks Illustrated.” I love reading cookbooks (library) and like the old classics from Betty Crocker to backs of food labels. I love to research lots of recipes before I decide which one to make.
