Banana Drop cookies

ingredients
- 2 1⁄4 cups flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 3⁄4 teaspoon salt
- 2⁄3 cup shortening
- 2 eggs
- 1 cup mashed banana
- 1 teaspoon vanilla
- 1⁄4 teaspoon cinnamon
- 1 teaspoon sugar, mixed with the cinnamon
directions
- sift flour, sugar, baking powder, soda salt.
- add shortening mix.
- then add eggs,bananas, vanilla and blend well.
- drop on ungreased cookie sheet.
- sprinkle with sugar and cinnamon mixture.
- bake at 400F degrees for 12 minutes.

These were ok, I wasn't expecting a cake type cookie. The batter was very loose, so I put it in the fridge for a half hour. The cooking time was about 8 mins, but you had to watch them closely. Once out of the oven the texture was crispy with a soft center which was pleasing, but shortly thereafter they lost the crispiness, and just became a soft cake like cookie. The flavour was good. <br/>Hubby likes them, but they're not for me. Thanks for posting. (I've added a picture)

These win points for being very quick and easy and kid friendly. I used half whole wheat and half white flour. I also found the cooking time to be a bit long and had them in for 7 minutes The bottoms were very brown the middles mushy, so I may have needed to make them a bit smaller. Also, I garnished each cookie with a slice of banana which was nice.
