Noodles and Tomatoes

"My grandmother started making this dish for us when we were kids. That was quite a few years ago! She once commented that she must have made a dump truck full of macaroni for us. I still make this -- it's comfort food for me. This is a very butter/tomatoey dish. It's not spicy and meant to be bland so that the creaminess of the butter, the tang of the tomatoes and the flavor of the pasta shine."

ingredients

  • 2 cups prepared pasta (I prefer egg noodles or elbows)
  • 1 (14 ounce) can crushed tomatoes (you can use whole tomatoes as well and just moosh them up)
  • 2 -3 tablespoons butter
  • salt
  • pepper

directions

  • Prepare the pasta according to pacakge directions and drain well.
  • While the pasta is draining, melt the butter in the pasta pot.
  • Add the pasta back to the pot, mix well.
  • Add the crushed tomatoes, mix well and serve.

  2. A nice quick and simple recipe. I add a little bit of Dashida (an asian beef soup stock), Garlic Powder, Pepper, Sugar, and a few dashes of hot sauce for spice. Just not too much of everything, just enough to give it a little something. Next time, I will add onions.
     
  3. My Grandmother in law used to make this all the time too. She always served it with "smokies" (smoked sausages) Brings back fond memories of Nana! Thanks for posting.
     
  4. My Mom used to make a version of this and she chopped up an 8oz block of cheddar cheese into cubes and added that. I make it alot. You could also use canned chopped tomatoes that come in italian and mexican style with spices already added.
     
  5. This sounded like comfort food to me so I gave it a try and what do you know.....my grandma (and my dad) used to make this for us too only with ground beef in it. Thanks for reminding me! I will make this again but add the ground beef next time :)

  2. I was in panic mode cooking dinner tonight and started cooking elbow macaroni before I knew what I was going to do with it! While I had chicken and zucchini on the grill I quickly got on 'zaar knowing I'd find a recipe to bail me out! This was it, and my 2 boys ate all the Noodles and Tomatoes before even trying the chicken and zucchini. I used Smart Balance light instead of butter. I also kept the noodle/ butter/tomato mixture on low heat for 10 minutes which I think melded the flavors together well.
