Throw Together Beef Stew

"I love making this beef stew, very fast, easy, and often better tasting than a stew I slave over for hours. Also, makes a colorful dish."

• Serves: 8-10

ingredients

• 1 lb beef, cubed
• 1 -2 carrot, peeled&sliced
• 1 large potato, med cubed
• 1 cup uncooked tri-color spiral pasta
• 2 (15 ounce) cans diced tomatoes
• 6 1⁄2 cups water
• 3 cloves diced garlic
• 4 beef bouillon cubes
• 1⁄2 teaspoon basil
• 1⁄2 teaspoon oregano
• 2 bay leaves
• 1⁄4 teaspoon black pepper
• 1⁄2 teaspoon onion salt

directions

1. Over med.
2. heat, cook beef in stew pot w/onion salt, pepper& garlic (about 15 min.) Add tomato, water, spices, bullion cubes and carrot, boil for 15 minutes.
3. Add potato and pasta, bring back to boil until cooked through.
4. Enjoy.
5. (For a spicier version that is still wonderful, sub one can of diced tomatoes for a can of diced tomatoes w/chilies.).
