Healthier Pumpkin Muffins

"I love muffins and the Fall! Nothing says Fall like pumpkin muffins. My family is trying to eat a little healthier so I'm beginning to learn to use ingredients like wheat flour, oats, and apple sauce. This came from experimenting with a few recipes ."

  • Blend pumpkin, water, eggs, butter and applesauce.
  • Mix remaining ingredients together .
  • Add dry ingredients to pumpkin mixture until just mixed. (Do not over mix or use handed mixer. This will produce dry muffins.).
  • Fill greased muffin tins.
  • Bake at 350 for 25-30 minutes or until toothpick comes out clean.
