ingredients
- 1 (15 ounce) can pumpkin puree
- 4 eggs
- 1 cup water
- 1⁄2 cup butter (melted)
- 1⁄2 cup applesauce
- 2 cups all-purpose flour
- 1 cup wheat flour
- 1⁄2 cup oats
- 1⁄2 teaspoon salt
- 1⁄2 cup sugar
- 1⁄2 cup brown sugar (packed)
- 2 teaspoons baking soda
- 1⁄2 teaspoon baking powder
- 2 teaspoons cinnamon
- 1⁄2 teaspoon nutmeg
- 1⁄2 teaspoon ginger
directions
- Blend pumpkin, water, eggs, butter and applesauce.
- Mix remaining ingredients together .
- Add dry ingredients to pumpkin mixture until just mixed. (Do not over mix or use handed mixer. This will produce dry muffins.).
- Fill greased muffin tins.
- Bake at 350 for 25-30 minutes or until toothpick comes out clean.
