"My Sis was talking about an avocado omelet so I made up my own recipe."

ingredients

• 2 eggs, beaten
• 2 green onions, diced
• 1 mushroom, sliced
• 2 slices avocados
• 2 tablespoons cheese, shredded
• 2 tablespoons salsa

directions

1. Spray hot skillet with Pam cooking spray.
2. Pour in beaten eggs.
3. Add green onions and sliced mushroom.
4. Add shredded cheese.
5. Add avocado slices.
6. Flip in half; top with salsa.
7. Plate.

Dee-licious omelette! Some extra avocado snuck into this dish, otherwise made as listed. Wouldn't change a thing! Made for Went To The Market. Thanks Dienia B.! :)

Love Mexican sytle omelettes, so this was totally up our alley. For a double recipe we used 6 ounces of mushrooms and a half avocado (we sauteed the mushrooms first and topped the finished omelette with the avocado). These were very tasty and went well with tortillas.
