- 3 slices bacon, chopped
- 1⁄4 cup chopped onion
- 3⁄4 cup green pepper, chopped (optional)
- 1 garlic clove, minced
- 3 1⁄2 cups chopped tomatoes
- 1 cup chicken broth
- 1⁄2 cup white wine (optional)
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon basil
- 1⁄2 teaspoon thyme
- 1⁄2 teaspoon paprika
- 1⁄2 teaspoon Tabasco sauce
- 1⁄2 teaspoon marjoram
- 2 cups meat (eg shrimp, chicken, ham, sausage etc) or 2 cups seafood (eg shrimp, chicken, ham, sausage etc)
- 1 cup uncooked rice
directions
- saute bacon, onions, peppers and garlic until tender. Add tomatoes. Add chicken broth, wine and seasonings. Bring to a boil and add rice. Reduce to a simmer - stirring occasionally and checking the liquid level, adjusting if necessary. When rice is cooked, add meat and/or seafood and heat through quickly.
