Alfredo Scampi

"Shrimp Scampi with Pasta. Scallops or crab can be used. You may also add all of the above or any other shellfish."

ingredients

• 1⁄4 cup olive oil
• 8 ounces cream cheese
• 1 1⁄2 pints half-and-half
• 1⁄3 cup parmesan cheese
• 1⁄3 cup romano cheese
• 1 bunch scallion
• 6 garlic cloves
• 1 teaspoon oregano
• 1 teaspoon basil
• 1 tablespoon Old Bay Seasoning
• 1 teaspoon fresh coarse ground black pepper
• 1 lb raw shrimp
• 1 tablespoon parsley
• 3 egg yolks

directions

1. 1. dice scallions and garlic and shrimp saute in olive oil.
2. 2. add all spices.
3. 3. add cream cheese and melt.
4. 4. mix egg yolks with half and half.
5. 5. add half & half and simmer.
6. 6. add cheese.
7. 7. serve over pasta of choice.
