Roasted Salmon With Herbed Yogurt

  • Preheat oven to 450 degrees F. Cover a baking sheet with foil.
  • In a small bowl, mix yogurt, mustard, dill and parsley. Season with salt and pepper to taste.
  • If you are using salmon with a skin, place fillets skin side down on the baking sheet. Spread the yogurt mixture on salmon. Roast until fish flakes easily with a fork (usually 8-12 minutes).

  1. Cut the recipe in half for DH and I and added a little bit of minced garlic and shallots to the greek yogurt sauce...delicious! This is a simple and easy recipe to do when you are short on time and one that is great tasting. Thank you for posting. Made for Fall PAC 2012 Orphanage tag game.
     
  2. Made as written, this was good but I thought it needed something, maybe some garlic or lemon zest. <br/>I liked the simple preperation of roasting the fish in the oven. Made for PAC Fall 2012
     
  3. We love salmon in our house so I'm always looking for new salmon recipes and this hit the spot. I actually just used plain yogurt because I didn't have greek yogurt and it was still quite good. I upped the garlic a bit too because we love garlic, and served it with veggies cooked in lemon juice. We all loved this salmon - even my not-quite-one-year-old ate an ENTIRE fillet all by himself! Ha! Thank you for a great recipe.
