Peanut Butter Squares

"These are a homemade version of Reese Peanut Butter cups by Nigella Lawson. They got me through my 10 years in England where I couldn't buy the Reese version. Now I think the whole family prefer these."

  • line a 23 cm square tin with foil or parchment paper.
  • Stir all ingredients for the base together until smooth. You can use the paddle attachment to a mixer but a bowl and wooden spoon work just as well. (some of the sugar will remain lumpy).
  • Press the sandy mixture into the bottom of the tin as tight as possible and make the top as even as possible.
  • To make the topping melt the chocolate and butter together and spread on the base.
  • Put in the fridge to set.
  • When the chocolate is hardened cut into small squares.

I am the mother of two wonderful boys, Henry and Thomas. Henry has very exotic taste and would eat olives and extra strong cheese all day if I let him. Thomas is a more basic creature who eats just about anything. I am married to Michael who must be a saint for not only loving me but eating anything I make! I lived in England for 10 years but have recently moved to British Columbia. I have always been a Canadian through and through. I was a primary/elementary school teacher but now I am at home with my two boys! Saturday mornings used to be for sleeping in but lately they have turned into our baking time before Daddy gets up. How life changes!
