  • Combine the cucumbers, onions and red pepper.
  • Sprinkle with salt and mix thoroughly.
  • Let stand on counter overnight.
  • Rinse in cold water and let drain thoroughly.
  • Mix sugar, flour, ginger and tumeric in a large pot.
  • Add vinegar.
  • Bring to a boil.
  • Add cucumber mixture and simmer until it is thickened.
  • Process in a hot water bath for 5 minutes.
  • Preparation time does not include standing overnight.

  1. I love this relish and have made it for several years. Can't believe I haven't reviewed it. It is similar to commercial hot dog relish, but lots better. Its consistency is somewhat firm and not at all runny, so it can be piled on without fear of making the bun soggy. I have found the recipe to be very forgiving, so if one doesn't care for so many onions, for example, they can be cut back. I felt it is too sweet, so I reduced the sugar to 1 cup, and,upped the spices somewhat. Of course, you can always add sugar or spices before you finish simmering. Can't remove them, though! The 8 cups of cucumbers (I prefer Kirby's) turned out to be a bit less than 4 lbs., an easier way of measuring. And chopping the veggies in my Cuisinart was a snap and provided a perfect consistency. So easy and so good! Thanks, Chill, for sharing this wonderful recipe.

  1. 8 cups of cucumbers is about 4 lbs., an easier measurement reduced the onions by about half. reduced sugar to 1 cup heaped the spice measurements and used Kirby cukes, my favorite for pickles and such.
