Frankenstein Minestrone Soup

"I created this out of necessity - I wanted to make minestroni soup, but I didn't have most of the ingredients, & I had a bunch of stuff that needed to be used up, so I threw it all in a pot & came up with a soup actually worth writing down. This can easily be doubled & it freezes beautifully"

• Serves: 6

ingredients

• 3 sausages
• 10 ounces corn
• 2 stalks celery, chopped, with leaves
• 1 carrot, chopped
• 1⁄4 cup red onion, sliced thin
• 1 garlic clove
• 8 cups beef broth
• 16 ounces tomato paste
• 1⁄4 cup pizza sauce
• 1⁄2 cup small shell pasta (acini de pepe)
• 1 dash oregano
• 1 dash sage
• 1 dash thyme
• 1 dash parsley

directions

1. Slice sausages into bite sized pieces & fry in bottom of pot
2. Add broth, corn, carrots, & celery. Simmer 10 minutes
3. Add all other ingredients & cook for 20 minutes.
