Cream Cheese Spice Bread

- 3 cups flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1 teaspoon nutmeg
- 2 teaspoons cinnamon
- 1⁄2 teaspoon cayenne (you may use more or less depending on personal taste)
- 1 (8 ounce) package cream cheese, softened
- 4 bananas, mashed
- 2 cups carrots, grated (about 2 large)
- 1⁄2 cup butter
- 2 cups sugar
- 1 tablespoon fresh ginger, finely grated
- 3 eggs
directions
- Preheat oven to 350 degrees.
- In large bowl, whisk together first 7 (seven) ingredients and set aside.
- In another large bowl beat together cream cheese, bananas, butter, sugar, eggs and ginger using a hand mixer. (I like to leave it a bit lumpy so you get bits of cream cheese in your bread).
- Stir in carrots.
- Slowing mix in dry ingredients until just incoperated.
- Divide mixture between two greased loaf pans.
- Bake for 60 to 65 minutes until a toothpick inserted in the center comes out clean.

Cayenne pepper in banana bread?!?! Never would have thought it, so I'm glad that you did Bekah! When the bread is warm, there is just a hint of cayenne - the spice develops more completely overnight, when completely cooled. Plus it has fruit and veggies, so it must be good for you too! My baking time was 55 minutes. Made for Everyday is a Holiday tag game.

Hi there. I'm a 26 year old new Mommy. I have a wonderful son (born 6-3-2008), a 6 year old step daughter and amazing man in my life. I work full time plus some so I am constantly looking for quick and easy dishes that don't compromise on flavor. I try to eat healthy most of the time but I think everyone needs a treat now and then. I'm hoping to get some of my own recipes posted on here but I tend to just throw things together and not measure. I actually started keeping a notepad and pen in the kitchen so I can jot things down as I make them. LOL, I'll let you know what happens.
