Apricot Chicken Salad

"The cayenne pepper and sweet apricot preserve combination is a great balance. Got this from a magazine a few years ago, perhaps Everyday Food. A bit more sophisticated than regular chicken salad."

  • Mix mayo, preserves, lemon juice and cayenne in a small bowl.
  • Toss chicken, grapes, almonds and tarragon in large bowl.
  • Add mayo mixture and toss until coated.
  • Season with salt to taste.

  1. This is DELICIOUS! I used a rotisserie chicken because I hate cooking chicken. I subbed plain Greek yogurt for the mayo as ShortieNJ suggested and it was perfect. YUM!
     
  2. this was awesome. I used greek yogurt instead of mayonnaise, omitted the almonds, and used green grapes since that's what i had. yummm
     
  3. Loved the slight sweetness from the peach preserves. I toasted my almonds, because I think they add a nice crunch and flavor that way. I mixed up the recipe without the chicken, then took 1/3 of it and added Morningstar Meal Starters "chicken" for my vegetarian daughter. The other 2/3 I made with real chicken. It was wonderful! Thanks!
     
  4. I have just made this wonderful chicken salad for the second time at my DH's insistence. We really enjoy this taste combination. The apricot gives it a tangy sweetness and the cayenne gives it a wonderful bit of heat. We added celery for a little more crunch, and really like to use cashews instead of the almonds. However, I have made it both ways and there is no loser. Thanks Julie. Update: Julie, so sorry I forgot to hit the much deserved 5 stars for this great salad.

I love to cook, but with two picky kids (ages 5 and 8) and no free time, I have a limited ability to be creative these days. I try to feed my family healthy foods so am always looking for quick, but wholesome meals. I usually only review the recipes that we found to be outstanding or very good. If something came out badly or I changed it drastically, I don't feel that it's fair to give it a poor review.
