Bikkies (Cookies) from Heaven

"From Good Taste November 2008. Haven't tried this one yet but hoping to do so before the end of the year for the DS's recreation group. Times and quantities are as per recipe posted in the mag."

  • Preheat oven to 180°C.
  • Line 3 baking trays with non-stick baking paper.
  • Beat the butter and sugar in a stand mixer till pale and creamy.
  • Add the condensed milk and flour to the butter mix, stirring to combine.
  • Stir in the the craisins and chocolate.
  • Divide the dough into 2 equal portions, wrap and refrigerate second portion while working with first and remove second portion when you put cookies/bikkies into oven.
  • Roll tablespoons of 1st portion into balls and divide among the prepared trays, allowing room for spreading.
  • Use the palm of your hand to flatten slightly (or you could press with a fork).
  • Bake in oven,swapping trays halfway through cooking for 8 to 10 minutes or until golden (swapping shouldn't be necessary in a fan forced oven).
  • Set aside on trays for 3 minutes to cool before transferring to a wire rack to cool completely.
  • Repeat with remaining dough portion.

  1. I made this by weighing ingredients, followed recipe exactly. These cookies are not sweet whatso ever and the texture is more cakey in sort of a way. They also start burnung on the bottoms before getting golden. I baked two batches hoping that someting would change with adjusting temperatures, or pressing flatter, and no they did not work for me. I wanted to give them to my youngest grandson for school cookies, but I am sure that he will not like them either. Sorry . Froze the rest of the balls I had ready, just have to figure out what to do with it now. Maybe a crumb topping for a crisp or something.
     
  2. I reduced the recipe to 24 cookies and got 26 good sized ones. Last time I went shopping I had picked up some cherry flavored cranberries so thats what I used here and they came out wonderfully. They have that great almost flaky texture that almost melts in your mouth. This recipe is going into my Christmas book. :D
     
  3. Absolutely wonderful! I used white chocolate chips instead of chopped chocolate to save a bit of time. Also, butter here comes in 454 g blocks and so that's what I used. The cookies didn't spread a lot, probably due to the slightly smaller amount of butter. I needed to bake them 11 minutes and ended up with a bit over 100 cookies. Made for Everyday is a Holiday Tag.
     
  4. Bikkies from Heaven is right. These are absolutly Divine cookies. I cut the recipe an half and got 3 1/2 dozen. They are a wonderfully tender buttery bikkie. Next time I will add a bit more crasins. I added a bit of freshly grated nutmeg to the last bit of dough. VERY nice addition. These will be made over and over again and are going in my Divine book for 2009. Made for Everyday is a Holiday Tag
     
  5. Well, I can't tell you how many this recipe makes, either, 'cause I quite counting after 55 & was still going strong! They were a bit of work to make, what with all that rolling, but enjoyable as long as I wasn't pushed to do other things! Loved the combo of cranberries & white chocolate (I realize that some people don't, but then some people are weird, IMHO!) Will be keeping your recipe around to make again! Thanks for sharing! With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
