- 1⁄2 cup butter
- 1 lb fresh mushrooms
- 1⁄2 cup onion
- 1⁄2 cup carrot
- 1 minced garlic clove
- 6 cups chicken broth
- 1 (6 ounce) package Uncle Bens wild rice
- 1⁄2 cup white wine
- 2 tablespoons flour
- 3 tablespoons water
- 1 cup whipping cream
directions
- Melt butter and sautee mushrooms, onion, carrots, and garlic. cook until tender.
- in large kettle put broth, veggies, rice, and seasoning packet.
- simmer 1 hour.
- stir in wine.
- blend water and flour and stir into soup.
- heat to boiling.
- stir in cream.
- serve and enjoy!

So.... I got to the point where you add the Uncle Ben's and discovered I was out(!?!) I had some Trader Joe's Basmati rice blend, added 1 c. of that, 1 t. seasoned salt and assorted herbs. I only used 1 1/2 T. butter and approximately 1/2 c. cream. Really liked the taste and simplicity. Even "slimmed down" it was rich and filling.
