ingredients

  • 1 (18 1/4 ounce) box lemon cake mix
  • 1 cup Rice Krispies
  • 12 cup butter, melted
  • 1 large egg, beaten
  • 1 teaspoon grated lemon, rind of

directions

  • Preheat oven to 350 degrees.
  • Combine all ingredients in a large mixing bowl until well mixed.
  • Shape into 1 inch balls and place 2 inches apart on ungreased cookie sheets.
  • Bake for 10 to 12 minutes.
  • Leave on cookie sheets for a minute or two and then cool completely on wire racks.

  1. These cookies are great!! If you like lemon bars or lemon poppy seed cake, you've GOT to try these. The rice krispies are a nice touch too. YUM YUM!
     
  2. I made these y'day evening. I used orange cake mix instead of lemon. I substituted the butter with margarine and did not use the grated lemon rind. These cookies turned out fabulous! The colour and taste was exceptional. Everyone at home, especially my mom, loved these. Thanks alot for the recipe!
     
  3. These cookies are very easy to make and very tasty! If you want a little more lemon taste drizzle cooled cookies with lemon icing made of 1 c confectioners sugar and 2 Tbls of fresh lemon juice mixed till smooth. Very tasty!!
     
  4. EASY is an understatement for these little jewels! Fantastic in every way...taste, color, texture - all wonderful. And all from ONE BOWL, to boot! The dough is easy to work with and I'm sure will freeze well (I'm hoping to have enough left to freeze for my Christmas trays!). This is the first time I've used a cake mix for a base and I'm looking forward to trying Maple Crisp Cookies by Inez Willenborg (#21770) since it is a similar recipe.   5. I loved this recipe but I like softer & chewy cookies. These were very crunchy. I made them with orange cake mix and were great tasting.I gave them away as Christmas gifts along with other cookies and everyone at school loved them.

I am also a fan of all things Amish, so I have quite a collection of things picked up in Reading, Lancaster and surrounding areas here in Pennsylvania. <br /> <br />I have 4 kids, who are the loves of my life and cooking for them and my husband keeps me on my toes! ;) <br /> <br />We bought an ice cream parlor in March 04 and it's been quite an experience! <br /> <br />Note: I love getting feedback on my recipes; all I ask is that you actually *make* them before reviewing them. <br /> <br />Also, if you make changes or substitutions, I'd love to see your suggestions and/or comments, but I'd appreciate no rating at all if it's not made as posted.
