Parmesan Catfish Filets

ingredients
- 1⁄2 cup fresh parmesan cheese, grated
- 1⁄4 cup flour
- 1⁄2 teaspoon pepper
- 1 teaspoon paprika
- 1 teaspoon creole seasoning (Tony's)
- 2 lbs catfish fillets, skinless
- 3 tablespoons skim milk
- 2 tablespoons butter, melted
directions
- Preheat oven to 400 degrees.
- Combine parmesan, flour, and seasonings.
- Dredge the catfish in milk.
- Coat fish WELL in cheese mixture.
- Place on baking dish.
- Drizzle butter over coated filets.
- Bake at 400 degrees for 15 to 20 minutes or until fish is done and become flaky.

What a great catfish recipe! I, too, used Old Bay Seasoning instead of creole seasoning as I am a wimp with hot stuff. This was easy to fix and we enjoyed it with roasted potatoes and cole slaw.<br/>I will spray the pan first next time as I had trouble removing the fish from the baking pan. I didn't use the paprika as I have an allergy. However, it turned out wonderful. Should have made a double batch. Also used halibut not catfish available here. Still the white fish was wonderful. Put it under the broiler about 7 minutes to put the crunch on the top at the end of the cooking cycle. Thanks again.
