Curried Sweet Potato (Kumara) & Coriander Soup

ingredients
- 2 teaspoons oil
- 1⁄2 cup onion, finely diced
- 1 garlic clove, crushed
- 1 teaspoon curry powder (your prefered brand)
- 2 cups chicken stock
- 475 g kumara, mashed
- 1⁄4 cup light sour cream
- 1⁄2 cup fresh coriander, finely chopped (Cilantro)
directions
- Heat oil in saucepan over low heat. Add onion, garlic and curry powder cook, stirring, for 2 minutes.
- Add stock and mash and bring to the boil, stirring until smooth. Reduce heat and simmer for 10 minutes.
- Add sour cream and coriander and season to taste with salt and pepper.
- Served with warmed naan bread if desired.

I added the chopped fresh sweet potato on the second step and allowed it to cook longer with the stock then pureed it with a hand wound. I then added an extra cup of stock because it was very thick. I felt the serving size was not very generous for four people, it was more for two. However we really enjoy eating this soup the flavours are outstanding. Thank you Calms79

I am completely addicted to meal planning and although I do not always know what I will be making on a particular day I love to be prepared enough to know there is a week or more of options in the house.
I'm currently on the look out for the perfect meatloaf. My mum made a great one which I haven't perfectly duplicated yet. Working on it though.
It was free form not in a pan and basted with a bbq sauce that I swear she once said had coffee in it???
