ingredients
- 3 cups sliced apples (preferably Jonathan)
- 1 1⁄2 cups oil
- 2 cups sugar
- 2 eggs
- 1 cup chopped walnuts
- 3 cups flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 2 teaspoons vanilla
- 1 teaspoon cinnamon
directions
- Preheat oven to 350F degrees.
- Mix together apples, oil, sugar, eggs& walnuts by hand in a large bowl, combining well.
- Set aside.
- Mix flour, baking soda, salt, vanilla& cinnamon in a separate bowl, then add to apple mixture (batter will be thick).
- Pour into ungreased 13x9 baking pan, and bake for one hour or until done.

Such an easy cake to make. I used 5 different varieties of apples, left over from making applesauce and left out the nuts as my husband does not like them. It baked up nice with the top a little crunchy and the inside moist and flavorful. I might add a bit of nutmeg the next time for a bit more spice. I could see doing this recipe with mixed fruits--apples, pears, peaches. It would be a great summer dessert. Serve it with some fresh whipped cream or vanilla ice cream to make it decadent.

This was very yummy. Admittedly, I made many changes. I used 1/2 cup oil and 1/2 cup homemade applesauce, reduced the sugar to 1 1/2 cups, and used raisins instead of walnuts. I also used a GF flour mix (Bob's Red Mill) and xantham gum. I will certainly make this again. It was a great way to use up extra apples
