Fluffy Horseradish Sauce

"A lovely sauce with roast beef any way...sandwiches, roast, etc. From The United States Regional Cookbook, Culinary Institute of Chicago, 1947. Chilling time not included in preparation time."

• Yields: 3/4 cup

ingredients

• 1⁄4 cup grated horseradish
• 1 1⁄2 tablespoons vinegar
• 1⁄3 teaspoon salt
• 1⁄8 teaspoon cayenne
• 1⁄3 cup heavy cream, whipped

directions

1. Combine first four ingredients and chill.
2. Just before serving, whip cream and fold in horseradish mixture.
