ingredients
- 1 lb hamburger
- 1 onion
- 3 (15 ounce) cans chili beans
- 10 ounces Rotel Tomatoes
- 1 (15 ounce) can black beans, drained
- 22 ounces white shoepeg corn, drained
- 1 (1 1/4 ounce) package taco seasoning
- 3 tablespoons hidden valley ranch dressing mix
- 2 cups water (add more if needed)
directions
- Brown hamburger and onion, drain.
- Add to the hamburger and onion the rest of the ingredients.
- Stir.
- Heat and let simmer an hour to let flavors combine. (great for the crockpot).
- Enjoy by topping with fritos, shredded cheddar cheese and sour cream.

I guess I'm the only person here who made this soup and didn't get good results. The soup tasted so salty, that I ended up throwing the whole thing out. After adding the taco seasoning mix, it didn't taste too bad, but once I added the ranch dressing mix, I think that's the reason why the soup tasted extremely salty. I would highly suggest using low sodium ingredients when making this soup. Also, I would only add 1 can of the corn, as 2 seems a bit extreme, plus sub beef broth for the water, and add some other kind of tomatoes to the soup, as the one small can isn't enough. I doubt I'll be making this soup again.

This was a good taco soup. I followed the recipe as written. Next time I would use beef broth instead of just water to give it a bit more flavor. I used a packet of hidden valley ranch dressing. I froze some of this for future lunches. We enjoyed this topped with cheddar cheese. Made for Spring PAC 2010.

Becky's a good friend to have around, farmwife! :) This soup was excellent! The Rotel & ranch mix are what make it stand out. I used the lime & cilantro flavored Rotel, Recipe #23537 and only one can of chili beans, but for 2 and a toddler, it was plenty. I served this with some broken taco shells, cheese sprinkled on top and a bit of fresh cilantro. Even my 3 yr old ate it all up! Thanks for sharing, Farmwife! As my name states I'm a farmwife and proud of it. My husband and I raised two wonderful daughters on the farm and our family was active in 4-H and FFA. We are still big supporters of both youth organizations.
