Italian Broccoli With Bacon

ingredients
- 1 lb broccoli floret (16 oz. bag of frozen broccoli florets or 12 oz. microwave safe bag of fresh broccoli may be substitu)
- 2 slices bacon
- 1⁄4 cup onion, chopped
- 1⁄4 cup fresh mushrooms, diced
- 1⁄4 cup fat-free Italian salad dressing
directions
- Steam fresh broccoli, or microwave frozen or fresh bagged broccoli according to package directions.
- Drain any excess liquid and set aside.
- Meanwhile, cook bacon in nonstick skillet until done.
- Remove from skillet and crumble.
- Wipe most of the excess grease from the skillet.
- Saute onions and mushrooms in skillet until tender.
- Add broccoli to skillet.
- Stir in salad dressing.
- Add crumbled bacon.
- Serve immediately.

This was very, very good. I didn't have any mushrooms so I omitted them, but I'll bet it's even better with them. This was so easy to make and I guarantee that I'll be making it over and over again! I'm thinking it might be good with a bit of Parmesan cheese grated over the top. Thanks so much for posting!

This was different and an enjoyable side dish. I served this with recipe #231084. The colors were nice and I liked the onions & mushrooms. I probably could live without the bacon if I was trying to reduce the fat content. I will make this again. Thank you for sharing your recipe! Made for Zingo ZWT 3.

I am also a fan of NASCAR. I have only been to 2 tracks, Talladega several times and Dover once, but I hope to visit many more. Pocono is only an hour away, so maybe someday! Atlanta is another real possibility with family close by.
My furbaby Wickett (a pekinese-poodle mix I had for almost 14 years) went to live at the Rainbow Bridge on April 4, 2007. He was literally my first born child! He will always be in my heart. We have a new dog now, Roxie, who is a Shih-tzu. I am an animal lover, and will always have a pet!
