ingredients

• 2 eggs, beaten
• 1⁄2 cup sugar
• 1 cup cornmeal
• 2 teaspoons baking powder
• 1⁄2 teaspoon salt
• 1 cup bread flour
• 1 large onion, diced
• 1 quart oil (for frying)

directions

1. In a bowl, mix together eggs, sugar and onio. Blend in flour, cornmeal, salt and baking powder.
2. Either deep fry or heat 2-inches of oil to 365 degrees. Drop batter by rounded teaspoon in hot oil and fry until golden brown. Drain on paper towel. Cook these in small batches to maintain the temperature of the oil.
