Toffee Sandwich Cookies

"This is an adopted recipe that I haven't yet tried. The original chef comments: "My cousin JoAnn makes cookies better than anyone I know. (I'll bet even better than you!) When she comes to visit, she always brings a giant tupperware container full of freshly baked cookies. These are my favorite!""

  • Cream butter and sugars; add eggs and vanilla.
  • Combine dry ingredients and mix into butter/sugar mixture.
  • Stir in toffee bits.
  • Drop by teaspoon onto parchment-lined baking sheet.
  • Bake at 350° for 10 minutes or until firm (do not brown).
  • Cool on a rack and make little cookie sandwiches with the frosting.
  • FROSTING-.
  • Cream butter and add sugar and vanilla.
  • Add milk to reach spreading consistency.

  1. I was not sure of how to rate this recipe, because I really did not like the cookies with frosting, I used skor bits for half the dough and chocolate chips for the other half. The one with skor bits deserved atleast 3 stars, but the ones with chocolate chips in it deserves atleast 10 stars (I wish I could press the button twice!). I already had a thick and chewy chocolate chip cookie recipe, and now I found a crisp one as well that is to die for!! I will be using this as my crisp chocolate chip cookies from now on. Thank you so much for the recipe ms_bold!!
