Great recipe! This is a flavorful, moderately dense bread that's not too sweet. I used diced dried apricots, walnuts and flax seed. The only problem was that much of the fruit ended up stuck to the bottom of the loaf :( but that's probably my bread machine's fault. I used the machine's "mix" cycle, and added the fruit and nuts when it beeped, but while some were distributed through the loaf, there were a lot on the bottom. If I make it again, I'll probably pull the dough out and knead the fruit in by hand. But the flavor and texture of the bread is really excellent!

I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!
