Buckwheat Fruit Bread

"Deliciously healthy bread which I adapted from Bread Machine Baking. Although I used raisins and dates when I made this bread, I think other dried fruit would also be delicious or even using only nuts."

  • Place all the ingredients, except for the dried fruit and nuts, in the machine, according to the order specified by your machine.
  • Program for whole wheat or fruit bread.
  • During the final kneading add the fruit and nuts (if using).

  1. Great recipe! This is a flavorful, moderately dense bread that's not too sweet. I used diced dried apricots, walnuts and flax seed. The only problem was that much of the fruit ended up stuck to the bottom of the loaf :( but that's probably my bread machine's fault. I used the machine's "mix" cycle, and added the fruit and nuts when it beeped, but while some were distributed through the loaf, there were a lot on the bottom. If I make it again, I'll probably pull the dough out and knead the fruit in by hand. But the flavor and texture of the bread is really excellent!
     
  2. Yummy, delicious, healthy bread, I can hardly wait to make french toast with some of it. I made it with Raisins, Dates and walnuts, the cinnamon is a nice touch with the molasses. It smelled SOooo good while baking. Thank you Ellie, for another delicious recipe.
