Z's Hearty Onion Soup

"I was cleaning up and came across a tablet of hand written recipes that I had copied down from somewhere. I don't remember where they came from but I thought I should put them here for safe keeping. I haven't made this yet but it is on my list for when Fall gets here. I liked this b/c cognac in it. I don't usually use wine in cooking so I would be using 1/2 cup more broth."

  • Saute onions in oil with garlic and salt til onions are golden, 5 minute.
  • Reduce heat and continue cooking til onions are soft, 20 minutes.
  • Add flour to onions, stir 1 minute.
  • Add broth, wine, cognac, bay leaf and pepper.
  • Bring to a boil.
  • Reduce heat and simmer 30 minute uncovered.
  • Remove bay leaf.
  • Preheat oven to 400.
  • Put soup in 4 oven proof ramekins.
  • Top with toast and cheese.
  • Bake until cheese is bubbly, 15 minutes.
