- 1 tablespoon canola oil
- 6 onions, thinly sliced
- 2 garlic cloves, minced
- 1⁄2 teaspoon salt
- 2 tablespoons whole wheat flour
- 6 cups beef broth
- 1⁄2 cup red wine
- 4 tablespoons cognac
- 1 bay leaf
- 1⁄2 teaspoon black pepper
- 4 slices whole wheat toast
- 1 cup freshly shredded parmesan cheese
directions
- Saute onions in oil with garlic and salt til onions are golden, 5 minute.
- Reduce heat and continue cooking til onions are soft, 20 minutes.
- Add flour to onions, stir 1 minute.
- Add broth, wine, cognac, bay leaf and pepper.
- Bring to a boil.
- Reduce heat and simmer 30 minute uncovered.
- Remove bay leaf.
- Preheat oven to 400.
- Put soup in 4 oven proof ramekins.
- Top with toast and cheese.
- Bake until cheese is bubbly, 15 minutes.
