Zippy Rice Pilaf

- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 2 teaspoons butter
- 1 cup long grain rice
- 2 jalapenos, seeded chopped
- 2 cups broth
- 1⁄2 teaspoon cumin
- 1 tablespoon cilantro
- 1⁄4 teaspoon salt
directions
- In saucepan, saute onion and garlic in butter until tender.
- Add rice and jalapenos and toss to coat.
- Stir in broth, cumin and salt; bring to a boil.
- Reduce heat; cover and simmer 18-22 min or til tender.
- Add cilantro and fluff with a fork.

I am a former retail management slave who is now a stay at home mom who absolutely loves her job. I have an eight year old, a two year old and a nine month old who all bring their own kind of joy to my life. My favorite thing in the world is to cook. We have a real, from scratch family dinner almost every night. Please don't be offended if I somewhat change a recipe in my review.
