Yummy Citrus Cheesecake

  • Preheat oven to 350 degrees.
  • In a bowl combine the cookie crumbs and the melted butter, press into the bottom of an ungreased 9 inch spring form pan.
  • In a large bowl beat the cream cheese, sugar, vanilla and almond extract on medium speed until well blended.
  • Next add the juices and fruit zests and mix well.
  • Add your eggs, one at a time, just until blended and pour over crust.
  • Bake in a 350 degree oven for 45 - 50 minutes, or until centre is almost set.
  • Cool completely, then place in fridge overnight.
  • When ready to serve, garnish with fresh berries.
