Savory Yellow Squash Casserole

ingredients

  • 2 cups cooked and mashed yellow squash (drain well)
  • 14 cup sugar
  • 12 cup mayonnaise
  • 12 cup grated cheddar cheese
  • 12 cup cracker crumb (I use Waverly crackers)
  • 12 cup onion, minced
  • 1 egg, beaten
  • 12 cup cracker crumb
  • 14 cup butter, melted
  • 12 cup chopped pecans

directions

  • Combine the squash, sugar, mayonnaise, cheese, 1/2 cup of the cracker crumbs, onion and egg. Place into a 1 1/2 quart casserole dish and top with cracker crumbs,melted buter and pecans (I place the cracker crumbs and pecans in a plastic bag and then add the melted butter- mix well.).
  • Bake in a 350 degree oven for 40 minutes. 4-6.

  1. Oh boy! Easy....delish...comforting...oh all of it! This is so good, I love, love, love this for so many reasons. I followed pretty close to the recipe, except did a couple things, used green and yellow squash, (ran out of yellow) and homemade breadcrumbs instead of the crackers, (didn't have any) but other then that, I followed exactly. For the photo, I did add some red pimento, to bring the colors higher. This is comfort food at it's finest. Love the fact it only has one egg, and really builds the love of the squash. Thanks, Nancy! :)
     
  2. Made this as a Thanksgiving side dish, and it was delicious. Everyone liked it. I used just one egg, because I thought my egg was really large! I may reduce the sugar next time because it was a little sweet. That may have been the squash though. It was the prettiest squash I've seen all year, and had a very sweet taste even before mixing everything together. Loved the pecan/cracker topping. Delicious and I've never topped squash casserole with pecans before. A very welcome new addition. Thanks for sharing! Made for PRMR tag game.

  4. What a nice yummy dish! I think I actually left the sugar out accidently, but loved it the way it turned out. I added slightly more onion, chopped in the food processor. I used Ritz cracker crumbs. Thanks!
     
  5. I liked the flavor of this very well. I'm not sure what cracker crumb is, I am guessing something we don't use much in NY. Thought it might be like bread crumbs, but heartier. I used matzo crumbs for falafel. They were fine mixed in, but too tough for the topping. This was very easy to make and I would certainly make again, but with crushed saltines or breadcrumbs or something like that for the topping.
