  • Preheat oven to 375°F.
  • Beat butter, sugar and brown sugar in large bowl until fluffy. Add eggs; beat well. Add flour and baking soda; beat until well blended. Stir in oats, white chips and apricots.
  • Loosely form rounded teaspoonfuls of dough into balls; place on ungreased cookie sheet.
  • Bake 7 to 9 minutes or until lightly browned; do not overbake.
  • Cool 1 to 2 minutes.

    These are a big hit here! I had a craving for something apricot, so I baked these up. I also added about a half a cup of slivered almonds. Very good, except next time I may add less white chocolate chips. They can get overly sweet when you get a cookie with a lot of them in it. Thanks!

    Very good--addicting! Was afraid that there might be "too much going on" with the apricots and the white choc. chips, but the flavors compliment each other nicely. Next time I'll try adding a bit of cinnamon, they might benefit from some spice. Would also be good with some added coconut flakes.
