Vegetable and Ground Turkey Soup

- 3 tablespoons olive oil
- 1⁄3 cup chopped celery
- 1 onion, chopped
- 1 lb ground turkey
- 4 cloves of minced garlic
- 1 teaspoon pepper
- 1⁄2 teaspoon salt
- 1 (14 ounce) can stewed tomatoes
- 1 beef stew seasoning (I use McCormick's)
- 3 cups water
- 1 cup beef broth
- 2 zucchini, quartered and chopped
- 2 squash, quartered and chopped
- 3 -4 carrots, chopped
- 1⁄2 cup frozen corn
- 1 cup frozen cut green beans
directions
- Heat olive oil in large pot and saute onions and celery until translucent, about 5-7 minutes.
- Add ground turkey and season with salt and pepper, add the minced garlic.
- Brown until no longer pink while stirring and breaking up large chunks of meat, drain well and return to pot.
- Add stewed tomatoes with juice along with remainder of ingredients.
- Bring to a boil, cover and simmer for an hour 1/2 or until veggies are soft.

I made this recipe, but used chicken stock instead of beef. I also used more corn that it called for, simply because corn is yummy. After consuming large quantities of the the delicious goodness, I thought hmmmm; this recipe would be awesome with some red chili flakes and curry. Needless to even say it was so good. The coolest things about this amazing recipes is it can be tweaked easily into a wide range of deliciousness. I am so happy I found it, next time I will use ground beef and instead of turkey. I am going to serve it with rice so the side, and homemade tortillas, adding a little chili seasoning to it. THANK YOU!!!!!!

Although hardly your traditional southern girl, I come from a huge southern family and have been cooking since I was eight years old.
