  • Preheat oven to 200C (180C fan forced).
  • Place pastry rectangles on line baking tray and bake till golden (5 to 7 minutes - check after 4 minutes).
  • Combine sugar and cornflour in a saucepan, add milk a little at a time and whisk in so you don't form lumps.
  • Bring to the boil, remove from heat and whisk in the vanilla, yolks and butter.
  • Cool with cling wrap pressed onto the surface so a skin doesn't form.
  • When mixture is cold, stir in cream.
  • Split matchsticks in half lenghtways and spoon custard on to the flat side and top with the rounded top second piece.
  • For passionfruit icing, mix the seeds and juice of the passionfruits well with the icing.
  • Spoon over passionfruit icing or just dust with icing sugar.
  • Serve immediately, if not doing so, make up and assemble just before serving, otherwise pastry will go soft, keep pastry in air tight container.

With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
