Vakalolo - Fijian Pudding

- 4 cups taro root, peeled, grated
- 1 cup coconut, grated
- 1 tablespoon gingerroot, grated
- 1 cup brown sugar
- 1⁄2 teaspoon clove, ground
- 1 teaspoon cinnamon, ground
- banana leaf
- 2 cups coconut milk
- 1 teaspoon salt
directions
- Grate the casava very finely. Mix all 5 ingredients together.
- Divide into 4 equal parts. Wrap in leaves or foil and steam for 40 minutes.
- While the vakalolo is steaming, gently heat the coconut milk and salt together and bring to a gentle simmer. Remove from heat. Do not put a lid on the pan or the coconut milk will curdle.
- Unwrap the vakalolo, place in a bowl and pour some of the coconut milk over the top.
