Unsloppy Joes (Easy Vegetarian Sloppy Joes)

ingredients
- 1 tablespoon olive oil
- 1⁄2 cup onion, chopped
- 1⁄2 cup celery, chopped
- 1⁄2 cup carrot, chopped
- 1⁄2 cup green pepper, chopped
- 1 garlic clove, minced
- 1 (14 1/2 ounce) can tomatoes
- 1 1⁄2 tablespoons chili powder
- 1 tablespoon tomato paste
- 1 tablespoon white vinegar
- 1 teaspoon pepper
- 1 (15 1/2 ounce) can red kidney beans (rinsed & drained)
- 8 kaiser rolls or 8 wheat hamburger buns
directions
- Heat olive oil in a large skillet.
- Add onion, celery, carrot, green pepper, and garlic.
- Saute until tender.
- Stir in tomatoes and next 4 ingredients.
- Cover, reeuce heat, and simmer 10 minutes.
- Add kidney beans and cook an additional 5 minutes.
- If using kaiser rolls: Cut a 1/4" slice off the top of each kaiser rolls; set aside.
- Hollow out the center of each roll, leaving 1/2-in think shell;.
- reserve the inside of rolls for other uses.
- Spoon bean mixture evenly into rolls and replace tops.
- Serve immiediately.
- If using "hamburger" buns:.
- Just spoon onto buns and serve.

A nice vegetarian alternative to the usual Sloppy Joes. I followed the suggestion of other reviewers and added more tomato -- specifically, the entire 6 oz. can of tomato paste -- and I'm glad I did. It added just the right flavor and some needed moisture. I think the only other change I would make would be to decrease the amount of chili powder, since my fiance and I thought that the flavor and heat of the chili powder overpowered the rest of the ingredients. We served this in warmed whole wheat pita, and very much enjoyed the meal! There's no way it makes 8 servings, though... or maybe we were just really hungry! :)

As written we thought this was a decent lunch option. I left out the celery and put in mushrooms instead. This did not make much sauce for us, unlike the photo. We thought it was fine on a bun. Nothing spectacular, but a good vegetarian lunch. I ended up adding a generous squish of ketchup to the leftovers in the pan so that the kids would eat it more like sloppy joes. They easily ate them on buns with baked french fries. Thanks for posting.
