Twice-Baked Ranch Potatoes

"Yummy! Using the microwave makes this recipe very simple. The combination of cream cheese, potatoes, and ranch dressing are scrumptious. I have no idea where this recipe came from. If you have never made twice-baked potatoes before have an extra potato on hand. Scooping the pulp out can be a little tricky and can cause the skin on the potato to break."

  • Scrub and pierce potatoes.
  • Place on a microwave safe plate. Microwave for 18-20 minutes or until fork tender. Turn the potatoes several times while cooking in the microwave.
  • Let the potatoes stand 10 minutes to cool.
  • In the meantime, combine cream cheese, milk, dressing, and mashed potatoes.
  • Cut each potato in half and scoop out the pulp leaving a thin shell.
  • Add pulp to cream cheese mixture and mash.
  • Spoon gently into potato shells.
  • Top with cheese.
  • Microwave for 3-1/2 to 4-1/2 minutes or until heated through and cheese is melted.

  2. Great!! You can use dry buttermilk dressing by Tone if you don't have the dry Ranch. I tried this with my frozen cream cheese thawed, it was great!!!

I absolutely love my job. I get to stay home with my baby and observe her growth and changes everyday. I love playing with her and watching her practice old skills and learn new ones. My husband is a wonderful Christian man. He loves to work on the computer and in his vegetable garden - which means we get lots of fresh veggies. He enjoys trying new and different things. His all time favorite food is spaghetti with sausage. I love to cook. I started cooking when I got married 5 years ago. Then I could only make spaghetti. My husband encouraged me to try new things and now I love it! I also try to quilt, but that is a completely different matter.
